A little about us.

Pilar Street Coffee Co. is an independent coffee roastery established in 2024, built on years of experience working with coffee and the people behind it.

We source and roast coffees from the Philippines and beyond, working to bring out what makes each one worth enjoying. Some are familiar, others a little different. We think there’s room for both.

Pilar Street.

Pilar Street is where our founder grew up.

It was a family home, a gathering place, and somewhere coffee was simply part of everyday life. It’s where we first learned to appreciate a good cup, not as professionals studying origins or roast profiles, but as people who enjoyed drinking coffee.

Long before it became a profession, coffee was something familiar. And in many ways, that’s still how we like to think about it.

The neighborhood has changed, and so has the old family home. But the name remains.

The work behind the coffee.

Our experience with Philippine coffee has taken us well beyond the roastery, with opportunities to showcase the country’s coffees on the international stage, from Paris and Milan to Tokyo and Monaco.

Along the way, our Chief Coffee Roaster has earned recognition in international coffee competitions, bringing that experience and perspective into the work we do today.

But the work has always been about more than roasting and recognition. Behind every coffee are the people who grow, process, and produce it. Their knowledge, effort, and craftsmanship are what make our work possible.

We value those relationships and believe that good roasting begins with respect for the coffee and everyone who helped bring it this far.

We put the work into the coffee so you can enjoy it however you like.
